Healthy Baked Veggie Fries

This versatile recipe can be adapted by using your own variety of herbs, dipping sauces and vegetables. It's really a method you can use to make your own healthy and delicious veggie fries.

COOK TIME: 15 minutes

Ingredients
About 2 cups veggies of your choice, washed, dried and sliced into 1/4" thick "fries". (See note for vegetable options below)
Non-stick cooking spray
Salt and pepper, to taste
Honey, for drizzling

Here are some vegetable options for you to experiment with:
Sweet Potatoes
Baking Potatoes
Carrots
Zucchini
Green Beans
Summer Squash
Beets
Parsnips
Jicama
Eggplant

Directions
Preheat your oven to 400 F. Spray a large non-stick baking sheet with cooking spray. Arrange vegetable fries in a single layer on the pan. Spray the tops of the veggie fries with cooking spray. Season with salt and pepper.

Roast the vegetables for 5-15 minutes, until browned and fork-tender. Root vegetables will take longer than the beans and nightshades. Remove from oven, drizzle with honey, and serve immediately.
