In 2009, we planted romaine for the Nunes team. Our partnership has been a natural progression of two family companies coming together to become smarter and more efficient. Our operations completely complement each other.

Vegan Rice Noodle Salad
For the salad:
1 6.75-ounce package rice noodles
4 green onions, chopped
1 cup carrots, julienned
1 bell pepper, thinly sliced
1 cup sugar snap peas, washed and sliced

For the dressing:
1/3 cup rice vinegar
1 tablespoon tamari
1 tablespoon asian chili paste
1teaspoon sesame oil (light or dark)
Make the dressing: Combine all dressing ingredients in a large non-reactive bowl, whisk to combine and set aside.

Cook rice noodles according to package directions. Drain well. Add the noodles to the dressing and toss gently with kitchen tongs to combine, being careful not to mash up the noodles.

Put seasoned noodles in a serving dish and arrange vegetables on top. You can serve this right away or cover and refrigerate for a few hours so the flavors can marry.
Vegan Rice Noodle Salad
This noodle salad is quick to put together and can be served warm or cold, making it a great option for your next picnic or beach day. Experiment with your own combination of veggies, if you like. This recipe serves 4.
