Vegan Tofu Stir-fry
Ingredients
For the stir-fry:
1 10-ounce package of super-firm or extra-firm tofu, cut into 1" cubes
3-4 cups total vegetables of your choice; try experimenting with asparagus, sliced onion, sliced carrot, sliced summer squash/zucchini, green beans, bell pepper, corn or snap peas
2 tablespoons olive oil, divided
Sliced green onion, for garnish

For the sauce:
1 tablespoon tamari
1 tablespoon rice or white wine vinegar
1 tablespoon freshly grated ginger
2 garlic cloves, finely minced
1-2 teaspoons honey, to taste
1 teaspoon sesame oil (optional)

2 cups prepared brown rice, to serve
Directions
Make the sauce: in a non-reactive bowl, whisk together all sauce ingredients and set aside.

Heat a large skillet to medium and add 1 tablespoon olive oil. Sauté the tofu pieces, turning with tongs, until all sides are brown and crispy, about 6-7 minutes total.

Remove tofu from pan and set aside. Turn the pan up to medium-high and add the other tablespoon of olive oil. Add veggies and stir-fry until they are crisp-tender, about 3 minutes.

Add the tofu back into the pan, add the sauce, and heat for another minute. Remove from heat, place on top of rice and garnish with green onions.
