Asian Beef and Broccoli with Noodles
With a quick prep time and a minimal amount of ingredients, this recipe is much lower in fat and calories than the classic restaurant take-out version.

COOK TIME: 10 minutes
1 pound beef top round steak, 1 inch thick
2 medium carrots, peeled and thinly sliced
6 ounces Oriental flavored ramen noodles
2 cups water
1 teaspoon fresh orange peel, grated
1 1/2 teaspoons cornstarch
1/2 pounds fresh broccoli florets
2 tablespoons vegetable oil
Cut beef steak lengthwise in half, then crosswise into 1/8-inch thick strips. Combine seasoning from ramen noodles and cornstarch with a fourth of the water in large bowl. Add beef; toss.
Heat half the oil in large nonstick skillet over medium-high heat until hot. Stir-fry broccoli and carrots for 1 minute. Add noodles and remaining water; bring to a boil. Reduce heat; cover and simmer 3 to 5 minutes or until vegetables are tender and most of liquid is absorbed, stirring occasionally.
3. Heat remaining oil in same skillet over medium-high heat until hot. Drain beef, discarding marinade. Stir-fry 1/2 of beef 1 to 2 minutes or until outside surface of beef is no longer pink. (Do not overcook.) Remove. Repeat with remaining beef. Serve over noodles. Sprinkle with orange rind.
