Bagel Pizzas with Tomato and Olives
This kid-friendly snack can be put together in minutes, and is great for brunch, lunch, dinner or an afternoon snack. Experiment with your own combination of herbs and veggies -- this recipe is fool-proof!
PREP TIME: 5 minutes
COOK TIME: 10 minutes
1 bagel, split (we used an onion bagel)
1/2 cup mozzarella cheese, torn into pieces
2 tablespoons pizza sauce
1 small tomato, thinly sliced
1/4 cup green or black olives, sliced
1 teaspoon parsley, for garnish (optional)
Preheat your oven to 375 degrees. Toast bagel halves in oven until they are just beginning to brown. Remove bagel halves from oven.
On a cookie sheet, place bagel halves cut side up and distribute pizza sauce, cheese, tomato slices and olives evenly over the top. Put back in your oven for about 5 minutes, until the tomatoes begin to soften and the cheese is melted and bubbling. Remove from oven and serve immediately.
