Cheesy Baked Tomatoes
Once you try these tomatoes, they will be a go-to side dish! Serve alongside grilled steak or chicken.
PREP TIME: 5 minutes
COOK TIME: 15 minutes
4 medium tomatoes
1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
1/2 cup fresh basil, chopped (optional)
1 tablespoon olive oil
Preheat oven to 400f.
Cut tops off of tomatoes and scoop out the seeds.
Place tomatoes in a baking dish. Mix parmesan and mozzarella cheeses together and divide evenly into four portions. Stuff into tomatoes. Drizzle olive oil over tomatoes evenly.
Bake for about ten minutes until tomatoes are softened and cheese is melted and bubbly. If you like, you can then broil for 2 minutes to crisp the cheese up.
Garnish with fresh basil, if desired.
