Classic BLT Sandwich

We have to ask if there's anything better than a classic BLT loaded with fresh, summer-ripe tomatoes. This version adds extra fiber and flavor by using healthy, whole-grain bread. We prefer heirloom tomatoes for this recipe, but any ripe summer tomato you have on hand is delicious, too!

PREP TIME: 10 minutes
COOK TIME: 5 minutes

4 slices bacon
2 slices whole-grain bread
2 leaves lettuce
4 thick slices ripened tomatoes
1 tablespoon mayonnaise
Salt and pepper, to taste

Cook bacon until crispy and drain on paper towels. Toast bread. Spread mayonnaise on each slice of toasted bread. Arrange bacon, lettuce and tomato slices on one slice of bread and cover with remaining bread. Serve immediately.
