Healthy Fruit and Veggie Chopped Salad
This simple and satisfying salad is our twist on the classic Italian chopped salad. Make this recipe vegan by omitting the cheese.

For the salad:
1 head romaine lettuce, washed, dried and chopped
*1 cup fresh pineapple, diced
1/2 cup pomegranate arils
2 avocados, diced
1/2 cup red onion, finely minced
6 ounces feta cheese, crumbled
For the dressing:
4 tablespoons rice wine or sherry vinegar
1 teaspoon dried basil
2 teaspoons honey
2 tablespoons feta cheese
1/2 cup extra-virgin olive oil
Salt and pepper, to taste
*If you cannot find fresh pineapple, feel free to use a diced apple or pear
Make the dressing: in a lidded glass jar, combine the first 5 dressing ingredients. Shake vigorously to combine (the dressing should begin to thicken as the oil emulsifies). Season with salt and pepper and set aside.
To assemble the salad, layer all ingredients in a large serving bowl and toss gently to combine. Drizzle with vinaigrette and serve immediately.
