Just Peachy Salsa

This fruity and delicious Summer salsa tastes good on pretty much anything -- put a scoop on top of grilled halibut or chicken, use as a topping for a turkey burger or just serve straight-up with tortilla chips. If you can't find fresh, summer-ripe peaches, you can also use diced pineapple or mango. This salsa keeps, refrigerated in a nonreactive container, for up to three days.

COOK TIME: 0 minutes

1 pound ripe tomatoes, cored, seeded and diced
1 bell pepper, seeded and finely diced
2 jalapeños, seeded and finely diced (omit the seeds if you like less heat)
1 medium red or sweet onion, finely diced
1 1/2 pounds summer-ripe peaches, pitted and diced
1/2 bunch cilantro, chopped
2 tablespoons lime juice
Salt and pepper, to taste

Fold first 7 ingredients together in a mixing bowl to combine. Season to taste with salt and pepper. Serve immediately or chill for an hour first.
