No Mayo Creamy Chicken Salad
We've lightened up this simple chicken salad by using white meat chicken and low-fat sour cream in lieu of the mayo. This salad makes a lovely not-sad desk lunch or easy dinner. This salad stores well, refrigerated, for up to three days.
PREP TIME: 5 minutes
COOK TIME: 0 minutes
2 cooked chicken breasts, cut into 1" cubes
1/2 cup low-fat sour cream
1/2 red onion, cut into slivers
2 celery stalks, chopped
1 head leafy green lettuce, washed and dried
Salt and pepper, to taste
In a large bowl, combine chicken, sour cream, onion and celery. Fold gently to combine. season with salt and pepper, to taste.
To serve, place a handful or two of lettuce in a serving bowl and top with a scoop of chicken salad.
