Rice with Onions and Apricots

Sweet and aromatic, this healthy version of fried rice pairs well with a roasted pork tenderloin. Make this recipe vegetarian by using vegetable stock in lieu of the chicken stock. Makes approximately 8 servings.

PREP TIME: 5 minutes
COOK TIME: 30 minutes

2 tablespoons olive oil
2 medium yellow onions, sliced finely
1 clove, garlic, crushed
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground turmeric
1/2 cup dried apricots, sliced finely
2 cups basmati rice
4 cups chicken or vegetable stock
1/2 cup raisins
1 cup julienne carrots

Heat butter in a large sauce pan; cook the onion, garlic and spices, stirring until the onion is soft. Add the apricots and rice and stir over heat until the rice is coated in the spice mixture. Stir in the stock and bring to a simmer. Cover with a tight fitting lid for 20 minutes. Remove from the heat and stir in the raisins, and carrots.
