Spicy White Bean Chili

Low in fat and sodium, this white chili is a real crowd-pleaser! Bring this to your next tailgate party and be the winner of the game!

PREP TIME: 5 minutes
COOK TIME: 30 minutes

2 Cups chopped white onions
4 Cloves garlic, minced
2 Tbs. olive oil
1 4.5 oz. can diced green chilies
2 Tsp. chili powder
1 Tsp. dried oregano flakes
1 Pinch of cayenne pepper
3 15-oz. cans white kidney beans, rinsed and drained
3-1/2 Cups low-sodium chicken broth
5 Cups cubed turkey or chicken
4 Oz. shredded jalapeño jack cheese
Sour Cream garnish (optional)

Heat oil in a large heavy pot and add onions and garlic. Cook and stir until tender; about 5 minutes. Stir in chilies, chili powder, oregano and cayenne and cook for a minute longer.

Mash two cups of beans; add these, the remaining whole beans and the broth to the pot. Bring to a simmer and cook covered for 10 minutes.

Stir in turkey or chicken; cook for 10 minutes or until meat is heated through. Stir in cheese until melted. Serve immediately. Garnish with a dollop of sour cream. Pair with warm tortillas or tortilla chips.
