Spinach Feta Muffins

These savory little nuggets of deliciousness are loaded with good-for-you greens and lots of salty Feta cheese. They make a great afternoon snack and a nice alternative to plain dinner rolls. This recipe makes 12 muffins.

PREP TIME: 5 minutes
COOK TIME: 20 minutes

1 egg
1 cup water
2 cups self-raising flour
1/2 teaspoon salt
3/4 cup feta cheese, crumbled
1 cup baby spinach, finely chopped
1/4 cup grated parmesan cheese

Preheat oven to 350 F. Grease a 12 cup muffin tin or line with paper liners and spray with cooking oil.

Mix all ingredients together except parmesan. You should have a very thick batter.

Spoon into prepared muffin tins and sprinkle with parmesan.

Bake for 15-20 minutes or until muffins are golden.
