Spring Bow Tie Pasta Salad
With the flavors of Spring, this salad makes a fantastic light lunch and excellent picnic fare. We used ricotta for this salad, but you can also use goat cheese.
PREP TIME: 10 minutes
COOK TIME: 10 minutes
2 cups bow tie pasta, cooked and drained according to package directions
1 cup frozen peas, defrosted, or fresh peas, lightly blanched
1 cup asparagus spears, blanched and chopped into 1" pieces
4 ounces ricotta cheese
1 tablespoon olive oil
Salt and pepper, to taste
Combine all ingredients in a large bowl and toss lightly to combine. Chill before serving.
