Veggie and Avocado Sandwich

Basically a salad between two slices of bread, this sandwich is made special by the addition of a homemade cilantro mayo and lots of ripe avocado. Pack up this simple, fresh and tasty sandwich for your next picnic or beach day. This recipe makes two sandwiches.

COOK TIME: 0 minutes

Sandwich Ingredients:
4 slices whole-grain or multi-grain bread of your choice
1 medium ripe tomato, sliced
1/4 red onion, cut into thin slivers
1/4 cucumber, thinly sliced into rounds
4 ounces mozzarella, sliced or torn
4-6 leaves lettuce, washed and dried
Salt and pepper, to taste

Cilantro Mayonnaise Ingredients:
2 tablespoons mayonnaise
2 tablespoons cilantro, finely minced

Mix cilantro and mayo in a small bowl and stir to combine.

On all slices of bread, spread cilantro mayo evenly. Layer remaining sandwich ingredients on two slices of bread and cover with the remaining bread. Wrap in wax or parchment paper and chill until ready to serve.
