Zucchini Rollups with Goat Cheese

Is there anything better in the Summertime than grilled zucchini? These nifty little rollups make a great party appetizer or afternoon snack, are super quick to throw together and fun for the kids to eat. This recipe makes about 10 rollups, but you can easily double or triple this recipe.

PREP TIME: 10 minutes
COOK TIME: 5 minutes

Ingredients
2 medium-size zucchini, washed and ends removed
4 ounces goat cheese, softened*
1 tablespoon olive oil
Salt and pepper, to taste

Directions
Preheat a grill or grill pan to medium.

Slice the zucchini lengthwise, so the slices are about 1/4-1/3 inch thick. Reserve the end pieces for another use. Brush one side of the zucchini slices with oil, season with salt and pepper and grill for about 3 minutes on one side. Brush the other side, flip, and grill for another two minutes. The zucchini should be slightly browned but not soggy. Set the slices aside for a few minutes to cool.

Once slightly cooled, lay the zucchini slices out on a flat dish or cutting board. Add about a tablespoon of goat cheese to each slice at the end of the slice. To make the rollups, start rolling the slices with goat cheese end and roll up the slices to the other end.

You can refrigerate and serve these chilled or at room temperature.

*To soften the goat cheese, just pull it out of the refrigerator about 20-30 minutes before assembling the rollups. Make the softened goat cheese easier to work with by putting in a small bowl and whipping with a fork to incorporate some air.
