Smoked Salmon Cucumber Bites
Ingredients
2 cucumbers, washed and dried
1/4 cup sour cream
1/4 cup (2 ounces) cream cheese, softened
5-6 slices smoked salmon
Salt and pepper, to taste
1 lemon, cut into wedges
Directions
Stir together sour cream and cream cheese in a bowl. Make sure to mix thoroughly to combine.

Peel the cucumbers either entirely or halfway so the remaining skins make "stripes" on the outside of the cucumber. Cut the cucumber into 1" rounds.

Place a dollop of the cream cheese mixture on one cut side of each cucumber. Top with a small piece of salmon. Add a sprinkling of salt and pepper to the cucumber bites and squeeze fresh lemon juice over the top of each bite. Serve immediately.
Smoked Salmon Cucumber Bites
These little treats taste so refreshing and will help hydrate you on a hot day. Make sure to serve these right after preparing as the water will quickly leech out of the cucumbers and pool up in the bottom of your serving dish.
